In my world, Friday is always all about Mexican food. So what else makes more sense on Foodie Friday than tamales for breakfast?
In full disclosure, I made this a few days ago, but I still have two tamales left and I think I will be making this again as soon as I hit “Publish!”
I bought these tamales from a local grocery store – Fiesta – which is obviously a store with a Hispanic focus. They are made in house and are really good. Good tamales should have an obvious filling that you can see and taste. Unfortunately most tamales I have had in restaurants are mostly corn masa with a little something in the middle. No. This is cheating. These tamales are full of tasty meat and as good as the home made tamales I have had in the past. Making tamales is something I have always wanted to learn to do…but that’s for another day.
Here’s the details of how I created this tasty item.
1. Wrap the tamales (still in corn husks) in a damp paper towel and place in microwave. Ideally they are warmed by steaming. I was hungry and chose to cheat.
2. I made a simple cheese sauce by warming a small amount of Crema in a skillet and adding shredded cheddar cheese. This is the only cheese I had in the house. In the future I will try topping the meal with Queso Fresco or other mild cheese.
Crema is a sweet (as opposed to sour cream) cream used at the table and in recipes. I have come to love this stuff and use it in lots of different ways. In fact – it is worth a blog post all its own some Friday.
3. While the cheese was melting and the tamales were warming, I cooked an egg in butter, over easy.
4. Finally, came the plating. I love my atomic starburst plate. It is perfect for a light bite and is just cute.
This simple meal could be a lunch or dinner as easily as it was my breakfast. I wish I had avocados in the house for this, as a few slices on top would have not only looked great but it would have been tasty as well.
Give it a try and let me know how you like it and if you did anything different that I might need to try! Tag me (#thewhimsicalhen) on Instagram so I can see what you are up to in the kitchen!
Until Monday…keep looking up, embrace today, and go have some fun (and eat a tamale)!
